Incidentally, someone did ask about
PIKELETS AND MUFFINS
and, yes they are in the Cookbook. [Note from June: These
Pikelets sound much like our donuts.]
Make a batter with 1 lb flour, a pint of milk and 1/4oz yeast. When beaten very light stir in 1oz melted butter. Let it stand for 1 hour, then pour into rings and bake on iron plate:

Beat egg lightly, add salt and milk. Sift flour and baking
powder together.
Make into dough with the liquid, beat well, roll out, cut into
rounds, brush with beaten egg and bake in a sharp oven for 10
mins:
For Cheese muffins add 1/2 cup gated cheese to flour and baking
powder:
